Ingredients

1.5 lb ground turkey thigh

2 tsp black pepper

2 tsp salt

1 tsp smoked salt

1/4 tsp crushed red pepper flakes

2 tsp rubbed sage

1 tsp parsley (dried)

1/4 tsp fennel seeds

1/2 tsp onion granules

1/2 tsp roasted garlic granules

1 tsp ground rosemary

2 tbsp maple syrup (optional)

ghee, butter, or olive oil

Instructions

  1. Put turkey in a large metal or glass bowl. Spread out and sprinkle with all remaining ingredients.
  2. Mix very well, using a large spoon or your hands, until spices are event incorporated.
  3. Form into patties. Usually makes about 18.
  4. Heat ghee/butter/olive oil in a large skillet over medium heat.
  5. Cook sausage patties over medium heat until browned, flipping once, about 5-7 minutes per side. (You may need to reduce the heat to medium-low, depending on your stove.) For safety, I always check that they are cooked to an internal temp of 165 F.
  6. Serve, or refrigerate in an airtight container until you want to eat! These even freeze and reheat very well in a toaster oven – about 12 minutes at 350 from frozen.
