Ingredients
1.5 lb ground turkey thigh
2 tsp black pepper
2 tsp salt
1 tsp smoked salt
1/4 tsp crushed red pepper flakes
2 tsp rubbed sage
1 tsp parsley (dried)
1/4 tsp fennel seeds
1/2 tsp onion granules
1/2 tsp roasted garlic granules
1 tsp ground rosemary
2 tbsp maple syrup (optional)
ghee, butter, or olive oil
Instructions
- Put turkey in a large metal or glass bowl. Spread out and sprinkle with all remaining ingredients.
- Mix very well, using a large spoon or your hands, until spices are event incorporated.
- Form into patties. Usually makes about 18.
- Heat ghee/butter/olive oil in a large skillet over medium heat.
- Cook sausage patties over medium heat until browned, flipping once, about 5-7 minutes per side. (You may need to reduce the heat to medium-low, depending on your stove.) For safety, I always check that they are cooked to an internal temp of 165 F.
- Serve, or refrigerate in an airtight container until you want to eat! These even freeze and reheat very well in a toaster oven – about 12 minutes at 350 from frozen.
