Black Bean and Avocado Tacos

These basic vegan tacos are always tasty, quick, easy, and customizable. The perfect meal for a busy day.

Ingredients

tortillas

cooked black beans (refried, or whole beans, smashed)

avocado, sliced

salt

pepper

desired toppings: escabeche (picked veggies), salsa, cilantro, greens, jalapeno, tomato, lime, etc…

 

Instructions

  1. Warm beans and tortillas. Prepare vegetables (wash/slice).
  2. Assemble tacos (black beans, avocado, salt, pepper + desired toppings). Yum.
