Cauliflower, Roasted with Indian spices

Warm and savory cauliflower with just the right amount of spice - roasted with onions, garlic, jalapeños, cumin, and turmeric.

Ingredients

1 head cauliflower

1/2 small yellow onion

1 jalapeno

2 cloves garlic

1-2 tbsp olive oil

1/2 tsp salt

1/4 tsp pepper

1 tsp cumin seeds (if you don’t have them, leave it out)

1 tsp ground cumin

1 tsp turmeric (powder)

1/2 tsp ground coriander

1/4 tsp cayenne

Optional: lemon juice

 

Instructions

  1. Preheat oven to 475
  2. Trim and cut cauliflower in to florets. Mince onion, jalapeno, and garlic
  3. Toss cauliflower with olive oil, then add onion/jalapeno/garlic. Sprinkle with salt/pepper and other spices
  4. Spread in a single layer on a baking sheet. Roast for 30-40 minutes, until cooked how you like – 30 minutes for a little crunch, 40+ minutes if you like it softer.
  5. Optional: Switch your oven to broil for the last few minutes of cooking to get a wonderful golden crisp on the tops. Top with a spritz of fresh lemon juice, if desired.
