Arugula & Kale Chopped Salad

This flavorful and peppery chopped salad is a great, quick addition to any meal. Baby arugula and kale with green onion, radishes, and feta - dressed in olive oil and lemon juice. If you like arugula, you will love this salad!

Ingredients

Baby arugula

Baby kale

Radishes

Green onion

Feta (optional)

Salt

Pepper

Olive oil 

Lemon

 

 

Instructions

  1. Chop arugula and kale. Slice green onion. Slide radishes, then halve/quarter (depending on size).
  2. Toss arugula, kale, and green onion together in a bowl. Drizzle with olive oil (1-2 tsp per serving) and toss well. Sprinkle with salt and pepper, then a squeeze of lemon juice. A little goes a long way! Toss again.
  3. Divide into serving bowls, if desired. Top with sliced radishes, crumbled feta, and fresh ground pepper.
